Solution 2 will be a good way.
I have done this with two cars, while changing from 288mm solid rotors to 308mm floating rotors.

Chinese, but floating = should not suffer to warping like classic discs. Yyeah, buttons can get stuck over time but it is easy to clean them. But still 300 mm (grinder will solve it) + possibly need to buy new bolts..

Not all chineese things are bad.
Just try it.
